Fresh homemade pasta

Ever tried homemade pasta?  Oh, boy.  Once you've tried it, you'll never want that freeze-dried "grocery store" pasta again!  But it's expensive to buy fresh pasta, and it must be hard work to make your own homemade pasta right?  Well, sure, it's expensive to buy it pre-made, but to make it is easy, especially if you have a bread maker and my recipe for the perfect egg noodle!

"Robbie's homemade pasta is superb. I've always had trouble digesting pasta, but not his! Not only does it taste softer and lighter than freeze-dried pasta, it also has a richer, more satisfying flavor. There's just no comparison. It's like the difference between a fresh loaf of bread straight from the oven versus a processed loaf that's been sitting on the shelf for a while.

Ingredients:

  • 2 Cups Unbleached All Purpose Flour
  • 3 Large Eggs
  • 2 Tbsp Water (room temperature)

Yields: 4 adult helpings.


Add all ingredients to your breadmaker, and set to dough mode.  You want your breadmaker to knead the dough, but not cook it.

 

Bread Machine Pasta

Your pasta dough should have the consistency shown here. If it is too dry, add water 1/2 tsp at a time. If it is too wet, add flour 1/2 tsp at a time.

Start your pot of water on the stove.  You don't want the pasta to stick together while waiting for the water to boil; so get it going now.  The bigger the pot, the less chance of sticking together.  Salt and add a couple tsp oil to your water. 

 

 Roll the dough in flour, and place on a well-floured cutting surface. 

 

   

Cut the dough into 4 equal pieces.  Roll each piece in flour to avoid sticking.

 

Flour your hands, and gently stretch out each piece of dough with your hands.

 

Flouring the dough at every step, start pressing your pasta through the pasta machine at size 7, gradually working your way to size 2 or 3 (thickness).  You'll have four beautiful, long sheets of fresh pasta.

 

Cut each sheet into 8" sections, and then run through your pasta cutter.

 


Drop the pasta carefully into your boiling water, and immediately stir it up with a pasta lifter to break apart the noodles before they stick together.  Let cook for three minutes (or to taste) and strain.  If the pasta will sit for more than a couple of minutes, strain and put back in the empty pot and sprinkle with extra virgin olive oil and mix.

Top with your favorite homestyle sauce, and enjoy homemade pasta!

By the way--you see my pasta machine above; I've seen them at stores like Canadian Tire, Walmart, and Zellers.  They usually run between $50-75 CAD.  It's well worth the investment.  Homemade pasta is extremely cheap, and the health benefits and quality difference make it 100% worth it.  But as you know, we live in a lazy world of microwave dinners and freeze dried pasta.  I bought my machine at a yard sale, brand new and in the unopened box, for 50 cents.  So keep your eyes open, and see if you can find a deal.
