Robbie's Pineapple Chicken

 There's nothing like eating a bright, sweet and flavorful dinner like my Pineapple Chicken on a beautiful summer day!

Ingredients:

  • 10-12 chicken drumsticks
  • 2 cups unsweetened pineapple juice
  • 1 can (540mL) crushed pineapple in juice (not syrup)
  • 1 1/2 Tbsp Corn Starch


Directions:

Pour 2 cups pineapple juice into your slow cooker and set the temperature to high.

Pour in 1 can crushed pineapple.

Let the liquid cook for one hour.

After an hour is up, add 1 1/2 Tbsp corn starch and whisk it in until there are no lumps of corn starch.

Toss a splash of extra-virgin olive oil into a pre-heated pan and pan fry your chicken drumsticks just enough to sear each side--but not to cook it through.  Remember: Olive oil likes to jump around.  It's a good idea to throw a screen overtop your pan (but not a lid) and remove the battery from your fire alarm.

Add the chicken drumsticks to the slow cooker and coat each piece well with the sauce.

Cook for 90 minutes.

Preheat your oven to 375°F.

Pan seared chicken drumsticks

Spoon enough pineapple sauce from your slowcooker into a casarole dish to cover the bottom of the dish.  Carefully lift each piece of chicken into the casarole dish and cover with the remaining sauce.

Place in the preheated oven for 15-20 minutes.

Before you plate, put the battery back in your fire alarm. 

Serve, and enjoy!
